Recipe of the Week: Amma’s Magic Chicken Curry.
A homely dish that brings warmth, spice, and smiles to the whole table!
What You’ll Need (Ingredients)
- 500g chicken (cut into medium pieces)
- 2 medium onions (sliced)
- 2 tomatoes (chopped)
- 2 green chilies
- 1 tbsp ginger-garlic paste
- 1 sprig curry leaves
- 1 tsp Rasa Padhama Chili Powder
- 2 tsp Rasa Padhama Roasted Curry Powder
- ½ tsp Rasa Padhama Turmeric Powder
- 1 tsp Rasa Padhama Cumin Powder
- ½ tsp Rasa Padhama Pepper Powder
- 1 cup thick coconut milk
- 2 tbsp oil
- Salt to taste

- Heat oil, saute onions, curry leaves, and green chilies until golden.
- Add ginger-garlic paste and fry until fragrant.
- Stir in Rasa Padhama spices, then tomatoes, cooking into a thick paste.
- Add chicken pieces, mix well, and cook until lightly browned.
- Pour in coconut milk and simmer until chicken is tender and curry thickens.

- Wash curry leaves and hand them over proudly.
- Count tomato pieces while Amma & Appa chops.
- Stir cooled down curry carefully with a big spoon (supervised).
- Be the official “taste-test boss”!

- Sprinkle in Rasa Padhama Pepper for a final kick.
